An amazing summer

Wow!
I can't believe I haven't posted since March.
The May long weekend found me in Edmonton at the U of A hospital ICU and so began my hospital summer.
I spent time in ICU, trauma, rehab and during rehab time I also did palliative care. Not a summer I care to repeat.

I did do some geocaching but not as much as I had planned.


New recipes.... well I don't know how to make them well but I had lots of great Thai food.

Geocaching

As many of you know a favorite hobby of mine is geocaching and as the weather warms up I find myself thinking about going geocaching. This past week has been great for me as two of my schools have now purchased GPS's partly because of me and with my assistance. I actually went and picked up 5 GPS's from SIR on Wed after work. So fun!

Menu Ideas

I have decided that more than recipes I need simple menu ideas. Please contribute menus that you enjoy along with the recipes for the main dishes.
Here goes a quick brunch one I like. The main recipe is already posted.

Brunch/breakfast
Puff oven pancakes (see previous posts for recipe)
bacon or ham
fresh or defrosted frozen berrries (strawberries, blueberries, blackberries, raspberries are favorites)
whipping cream
maple syrup or other syrup of your choice
coffee, tea, juice

Puffed Oven Pancakes
Oven is at 425 degrees Fahrenheit
While the oven is warming up place
2 tbsp margarine each into two pie plates and place in oven to melt the margarine.
Blend in the blender
6 eggs for about 1 min then
add at the same time: 1 1/2 C milk and 1 1/2 C flour
carefully add to the hot pie plates or baking pans and bake for 20 minutes.
Serve with fruit, whipped cream and syrup.
Optional; put sliced apples or apple pie filling into the pan before adding the batter.

Comfort Foods

Trevor's favorite isn't what you would usually think of as comfort food, however here it is;

Chicken or Turkey Casserole

2 C cooked Chicken or turkey (cubed)

1 C chopped celery

1 C slivered almonds

1 onion chopped

2 cans cream of mushroom soup or 1 can mushroom soup and 1 can cream of chicken soup

2 tbsp lemon juice

2 envelopes chicken bouillon dissolved in ½ C of water

½ C of peas

2 tbsp Soya sauce

Pepper to taste

Combine all ingredients, mixing thoroughly. Place in a casserole.

(Optional: sprinkle with crushed potato chips and/or slivered almonds)

Bake at 400 F for 45 minutes or until heated through

Serve on a bed of rice. (Serves 8 unless Trevor is there)
